For most vegan egg alternatives you can use ground linseed. Personally, I buy linseed as seeds ( I use them on my breakfast in the morning and in bread) and just grind them to a fine grind in a coffee grinder. You can also buy ground linseed, commonly known as flax when used as a ground food supplement.
Before you use this recipe you need to be sure what the egg is doing in the recipe. If the regular egg is being used as a raising agent then this technique will NOT work, if the egg is for raising (such as in cakes) I use a teaspoon of baking soda and a teaspoon of white vinegar in the recipe… Don’t worry, you can’t taste the vinegar!
If the egg is just being used as a binder, such as in burgers then this egg alternative works exceptionally well.
Be careful, this is a bit complicated!
Recipe
Take one tablespoon of ground linseed and mix with two tablespoons of water.
Leave to gel for approximately 5 mins
This makes one egg replacement.
I’m joking, it’s not really complicated, it’s one of the simplest things to do and works a real treat.
