I have to admit I absolutely love Parmesan and used to smother any Italian dish with it prior to going vegan. This is a brilliant alternative which works extremely well.
Ingredients
- Small bag of unsalted organic cashew nuts
- 1 tbsp Nutritional yeast
- 1 tsp Garlic Salt
Nutritional yeast is a staple of any Vegan, I buy the vitamin B12 fortified version, it looks a bit like fish food but once you have got over that it adds a brilliantly nutty and cheesy flavour to any sauce or dish.
Method
Chuck the whole lot into a food processor and blitz to fine crumbs. Don’t blend too much or you will begin to turn the cashew nuts into butter!
Place into an airtight container and store in the fridge, it should last a few months quite easily.
Sprinkle over Italian food as you would regular Parmesan, it works a real treat.
